This coconut pecan granola is the perfect topping for your favorite yogurt or just plain as a snack!

 2 tbsp coconut oil
 1 tbsp honey
 1 tsp vanilla extract
 1 tsp ground cinnamon
 0.50 tbsp Steviva Blend
 0.50 cup unsulphured, ribboned coconut
 0.50 cup pumpkin seeds
 0.50 cup chopped pecans
 0.25 cup dried goji berries

Preheat oven to 300°F.

Combine all ingredients making sure to thoroughly coat the dry ingredients with the wet ingredients.

Spread evenly on a parchment-lined baking sheet.

Bake for approx 7 minutes on each side

Keep an eye to make sure that the granola doesn't burn.

Cool completely and store in an airtight container in the fridge.

Enjoy topped with coconut or almond milk, or sprinkle on top of yogurt.
